APPAM | SOUTH INDIAN CUISINE
Appam is very similar to dosa, made with rice and lentil batter, which is fermented naturally and finally small pancakes are made. These are not as thin and crispy as dosa's but a bit thick. They can be stuffed or can be combined with any chutney or sambar. I usually make a light and quick stuffing so that it can carried in lunch boxes also.
Today I am posting Appam recipie, which is instant that is I haven't kept for fermention for hours though fermenting the batter naturally, always gives a better result. I already had coconut garlic chutney which I used for smearing the Appam and onion tomato cheese salsa as stuffing. For the batter, I used rice flour, white urad lentil(flour), yellow gram lentil flour (besan) and fine semolina This recipie is very quick easy light and filling.
Let's have a quick look at the ingredients: (use same cup for measurement)
• 2 cups rice flour
• 1 cup white lentil flour (urad dal)
• 1/2 cup gram flour
• 1 cup fine semolina
• 3 cups of curd
• water as required to make a flowing consistency batter
• 2 teaspoon sugar (not for taste but to give a brown crust on Appam)
• 3/4 th teaspoon salt
• 2 teaspoon baking soda+1/4 th teaspoon soda bicarb OR one and half teaspoon of fruit salt (ENO)
FOR SALSA:
• 3 ripe tomatoes (cut into fine pieces)
• 2 medium onions (cut into fine pieces)
• 2 cubes of Amul cheese((either grate it or cut into small cubes)
• 2 green chillies (finely chopped)
• green fresh coriander for garnish
• a pinch of paparika
• 1/2 teaspoon black salt or rock salt
• 1/2 teaspoon of roasted cumin seed powder.
Mix all the ingredients for making salsa in a bowl and toss.
Salsa Stuffing is ready.
LETS BEGIN:
• In a large bowl take all the flours that is rice, lentils, and semolina.
• Add salt and sugar
• Add curd
• Give a good mix making sure to remove the lumps
• Add water slowly to make a batter without lumps.
• Add fruit salt or baking soda+soda bicarb
• Give a good mix
Batter is ready to make Appam.
• Generously grease a non stick pan with butter.
• Once hot, sprinkle few drops of water and wipe it with a tissue.
• Take a small bowl of batter and pour on the hot pan.
• Generously spread the batter smoothly in circular motion.
• When the edges begin to lift smear it with garlic chutney and add the stuffing (you can use any filling).
• Roll it and serve with Sambar Chutney or just Salsa.
Quick and easy Appam is mouthwatering and delicious like another South Indian Cuisine.
