Can you imagine a festival without any sweet and that too...kheer and Poori?  No... atleast not me. Festive season of Hindus begins with Raksha bandhan and lasts till Diwali. Just two days before Rakhi, I start making my preparations. I weave silken threads for my two indulgent brothers and then I prepare some dry snacks and sweets for them. 
   
Before I pen down the ecstatic moments with my brothers, let me introduce you to this gorgeous festival "Raksha bandhan". 
Rakhi is not only the festival of brother and sister, but it is a festival of innocence, Whereby forgetting caste and religious discrimination, everybody vows for each other’s protection and is confined to the defense. The threads are tied on brother's wrist as a symbol of love, dedication, hearty blessings for brothers which strengthens the relationship of the siblings. And I have realised that this pious bonding grows more stronger when a sis is married and she longs to see her brothers specially on this day.

Taking myself back into the past, I remember the days of quarrels, screaming, abusing, torturing each other. My brothers became more humane and sympathetic towards me after my marriage. What a marvellous change? When I visit my parents house, their hearty, sensible and responsible attitude makes me feel at the top of the world.
So... this Rakhi, one of the most liked dessert for my family is kheer along with hot Poori's.

INGREDIENTS FOR KHEER

•3lt. full cream milk
•Approximately 100gms of mini rice grains, preferably basmati.(washed and soaked for atleast 1/2 an hour).
•Approximately 50gm of Sugar our as per your taste.
•Few strands of saffron
• cardamom powder freshly grounded
Almonds, resins, cashews, walnuts (about half cup in all)

Let's begin

•Bring the milk to boil in a heavy bottomed pan.
•Once the milk comes to boil add soaked rice and let it simmer on lowest flame with occasional stirring till the milk thickens.
•At this stage add cardamom powder, saffron, and sugar.
•Finally, take about 4 teaspoon of Sugar in a small pan and place it on low heat (caramalizing sugar).
•As soon as it turns dark brown, add it to the kheer which is still on low flame.
•Let it simmer for few more min.
•Delicious creamy kheer is ready to be served with hot poori's.
•Kheer can be served hot or cold as you wish. Both ways taste great.
