EVENING TEA IN THE RAINS THE TRANQUIL WATER WITH THUNDERING CLOUDS Who can stay indoors when the weather is at the peak of its beauty!! Just two and A half km from my home, the thunders and lightning called us at this spot popularly known as'fateh Sagar' where you can see some people, not many enjoying the weather. I brought along with me ' ginger tea' in the flask to enjoy under the black sky. A cloud, ominous and black, drifted over the mountain and released a sudden shower in the form of rain.

JAMS AND PICKLES

MANGO MURABBA (SWEET MANGO PICKLE) JAMS AND PICKLES As mangoes start fading from the market, I tend to preserve the king of fruits for infinite time as I am never filled with this fruit. One of the best things I do is pickle the mangoes in the form of Jams and Murabbas.       DIFFERENCE BETWEEN JAM AND MURABBA   Jam is sweet and sour jelly like consistency of a fruit or even many fruits cooked in sugar syrup whereas Murabba , is a side dish in which puree of semi ripe mangoes is either cooked with sugar syrup and then spiced or simply grated mango pulp along with sugar and spices is left in the Sun for aleast a week (depending on the intensity of the heat of Sun) till it becomes  juicy and soft . I made app. 400gm of Murabba from 2 mangoes. The sweet and sour,   savoury  and chilly  and the flavour of basil leaves in Murabba makes it a special side dish on my dining table. Eggless cake | tutti-fruity cake | fruit cake | semolina cake | EGGLESS TUTI-FRUITY SEMOLINA CAKE The main ingredient of the cake recipie I.e all purpose Flour is replaced by semolina. This cake is light, fluffy and can be used as a tea time snack. Favourite of all age groups. INGREDIENTS 1 Cup Semolina 3/4 Cup Sugar 1/2 tuti- fruity 1 tea spoon baking powder 1/4th tea spoon baking Soda 1 Cup Yogurt 1/2 cup milk 5 tea spoon melted butter 1 tea spoon Vanila essence 1 tea spoon zest of any citrus fruit Line the baking dish with greased Aluminium foil or greased butter paper. LET'S BEGIN Mix all the dry ingredients in a mixing bowl.Semolina, sugar, baking powder baking soda zest tutu- fruity In another bowl, combine all the wet ingredients (curd, milk, Vanila essence,)and whisk using a whisker or a spatula. PANEER DO PYAZA A quick and easy Tiffin recipie for my daughter.          Early in the morning, when I feel like adding something special to my daughter's lunch box Paneer with small whole onions  with lil spices and lil tomato sauce and multigrain Parathas makes a great lunch for her. Try this recipie for your tiffin, you will love it. INGREDIENTS *1 cup Paneer cubes 7 small onions peeled .Give a cross cut on onions. Do not separate. 1tomato chopped Green chilli (optional) Green coriander for garnish 2 teaspoon ginger garlic paste 1/4 turmeric powder 1/4 coriander powder Red chilli as per taste Salt to taste 1 tea spoon tomato sauce 3 tea spoon of any cooking oil.Use butter if making for children. Chocolate ice cream

DESSERTS : CREAMY CHOCOLATE ICECREAM Chocolate Icecream To beat the heat of summers and cherish my family ,I thought of making chocolate icecream which tastes exactly like any branded ice cream. This is creamy as well as soft and above all ice cream maker not required. Just simple ingredients and children's favourite chocolate icecream is ready. INGREDIENTS *1 lt. regular milk *1/4 th cup sugar *1/4 th cup Hershey's chocolate syrup *Amul cream 3 to 4 table spoons *some Tuti- fruity for garnish *almonds ,cashews, resins (optional) LET'S START In a heavy bottom pan keep the milk on low heat and reduce to 1/4 th or till it thickens and becomes creamy. Add chocolate syrup, sugar and cook for 5 min. Let it cool completely. Churn using a blender or in a mixer. Add cream and all the dry fruits. Keep for freezing overnight. VEG BIRYANI

                   VEG BIRYANI Biryanis literally means spiced rice. It is an ancient dish having its origin in South Asia. During Mughal period  Biryani was modified into a rich cuisine with the addition of nuts, veggies,spices, flavours and of course meat, chicken. Both Veg and non veg Biryanis taste great.             I like to cook the rice in vegetable stalk with a burning charcoal which gives the Biryani a smoky flavour. My mother used to cook this biryani in earthen pots on burning charcoal which is called dum giving process. It is because of this dum that all the flavours of veggies and spices are very well incorporated in the rice.  INGREDIENTS • 1 and a half cup long grain basmati rice. • 2 and a half cups of water/ Vegetable  stalk. • 1 potato diced. • 1 orange carrot. • 5 long beans. • 2 small florets of cauliflower. • 2 green chillies. • 4 red whole...

ICECREAMS | KULFI | INDIAN STREET FOOD

                                   DESSERTS | Indian street food    KULFI/ CREAMY PEANUT ICE CREAM Often described as traditional Indian icecream, Kulfi is one of the most popular Indian street food. It is a diary product in which full fat milk is reduced and than is combined with flavours and dry fruits and is allowed to freeze. To meet the daily demands of kids during Summers, home made kulfi brings a smile of contentment on their faces. This is super delicious any time INGREDIENTS *1lt.Milk *1/2 cup peanut paste *Sugar to taste *Colour, essence, dry fruits (optional) LET'S BEGIN Allow milk to reduce till colour changes. Add sugar and peanut paste and let the milk boil till it thickens. Turn off the flame. Cool completely. Churn with three blender. Pour in the moulds Allow it to freeze for about 8 hours. MANGO BASUNDI | DESSERTS

  Mango recipe |Mango basundi |Mango rabri | When we have mangoes in the season, everyday mango or its recipie is must. So, one has to be innovative to see a happy smile on children's face by just giving some of your time in peeling and chopping the mangoes. The result you get is simply fabulous.  Ingredients * 2mangoes finely chopped * 1 lit. Milk * 3 tea spoon sugar or as per taste * a pinch of yellow edible colour * few strands of safron * mango essence and dry fruits (optional) LET'S BEGIN * Boil the milk in heavy bottom pan and reduce till it's colour changes *Turn of the flame. Add sugar, safron, colour and essence and let it cool. *Add the mango pieces (leave some for garnish ) and churn.  *Keep in the  refrigerator and allow it to cool for about an hour.  Before serving add some mango pieces and serve cool.  A delicious summer desert Mango Basundi is ready.
